INGREDIENTS

1-1/2 lb kabocha squash

2 cups dashi

2 tbsp soy sauce

1 tbsp honey (can sub Monkfruit)

1/2 cup toasted nuts or seeds


DIRECTIONS

1. Quarter squash. Scrap out the seeds and insides with a spoon.

2. Lightly Steam the squash - Cook 1/2 way done.

3. Toast seeds or nuts 

4. Combine dashi, soy sauce & honey (Make sure the sugar dissolves into the liquids).

5. Cut the squash into bite-sized pieces.

6. Place dashi mixture, into a medium-sized pot and bring to a simmer.

7. Add squash, skin side down, & simmer for about 20 minutes. Squash should feel like a cooked potato, when pierced with a fork.

8. Roughly chop the seeds or nuts.

9. Combine squash, with seeds or nuts.


Transfer to a serving bowl & enjoy
