INGREDIENTS

1/2 lb (about 10 stalks) of celery

1 cup water

1 tbsp monkfruit

2 tbsp vinegar

1 tbsp kosher salt

1 spicy red pepper (I like Fresno)

1 inch square kombu (cut into thin strips)


DIRECTIONS 

1. Clean celery, peel the outer layer

2. Cut into small 1/3 inches

3. Combine all of the ingredients & lightly massage for about 30 seconds. 

4. Transfer to a Jar and refrigerate for at least 6 hours (I tend to give them a full day).
